Spicy Green Mango Jam from Food Network:
3 Green Florida mangoes, unripe
1/2 cup white vinegar
1/3 cup sugar
1 1/2 teaspoons salt
1-inch piece fresh ginger root, peeled  (I doubled this, I love ginger)
